Super Easy Spaghetti Meatballs
This is one of the first dishes I learnt to cook when I first moved out, and it's become one of my favourite standby recipes for a quick, easy, midweek meal. I love it because the sauce is very versatile, every time I cook it comes out different, depending on what I've got lurking in the fridge!
Serves 2
Basic ingredients:
8 Good quality pork sausages
200g Spaghetti
A red onion
A clove of garlic
A knob of butter
A splash of red wine
A tin of tomatoes
(Optional: carrot, celery, courgette, cinnamon, nutmeg, Worcestershire Sauce, balsamic vinegar, fresh thyme, oregano, basil, bay leaves etc.)

Epic Triple Layered Sausage Sandwich
I'm not writing a recipe for a sandwich, if you lack those skills you're on the wrong blog. However, it's probably the best sandwich I've ever eaten, so here's a list of ingredients should you wish to replicate it:
Serves 1
Pork sausages butterflied and grilled
Pan fried red onion
Finely sliced pickled cornichons
Three large free range fried eggs
Classic woodsmoke flavour HP barbecue sauce
Four slices of butter smothered toasted wholegrain seed encrusted bread.
This power sausage sandwich beast even set the fire alarm off. Not because of the smoke. Because it was jealous.

Fresh Pea and Courgette Risotto with Mint, Chilli and Buffalo Mozzarella
Mint, chilli and courgette is one of my all time favourite flavour combinations, and with the crunch of the fresh peas contrasting with the creamy risotto and gooey melted mozarella, this is an amazing way to celebrate the start of summer. Adapted from a Jamie's 20 minute meals recipe.
Serves 4
2 litres good quality veg stock (eg. Marigold)
2 courgettes
About 1kg unshelled fresh peas
1 medium white onion
A knob of butter
300g risotto rice (Arborio or Carnaroli)
Half a glass of white wine
1 red chilli
A handful of fresh mint leaves
A packet or two of Buffalo Mozzarella
